My name is José Manuel and I am usin GRAYLOG with opensearch and I want to know what version of beats (filebeat, metricbeat, auditbeat, etc) I have to use with opensearch so that is my question.

You can use Beats 7.12.x and lower version, they are compatible with OpenSearch, see Compatibility Matrix for Beats.
