OpenSearch compatible ECS templates

Hi,

we found the ECS very useful for many use cases and transitioned to OpenSearch for some services we build. Therefore i created a build process for the current state of ECS which can be loaded trough _index_template API. The rest of the ECS build process with smaller subsets should still work (although this is not fully tested yet). I plan to update/ check the process for every release tag in the upstream.
