Is there a way to disable TLS between nodes so that we don’t need to have a certificate when we’re sending the logs to elasticsearch? Preferably without disabling the security plugin since we want to to use the other features it provides.

There is currently no way to do this.
There is an open github issue on this that should make it into the roadmap. So I guess it will be possible at a future release
