Sink to a compatible s3 bucket

Versions (relevant - OpenSearch/Dashboard/Server OS/Browser): 2.12.1

Describe the issue: how would I configure a sink to an s3 compatible bucket (in this case hosted on an internal netapp)? There appears to be no way to specify an alternate endpoint.

@mattatjgi There is already a feature request submitted for this. I would recommend to keep an eye on it.
